Slightly Obsessed?

Good morning and Happy Memorial Day!

Last night I made another quinoa-based meal and I must say that I am quite happy with it!

quinoa

Ingredients
1 cup quinoa
Tomatoes (any kind will work)
Spinach
Garlic
1-2 tablespoons of white wine
Red Pepper Flakes
Avocado
Turkey (or chicken or tofu or whatever you want!)

Directions
Sautée garlic on stovetop.
Boil quinoa in a pot until the water is gone.
When quinoa is ready, add white wine, tomatoes, garlic,  and red pepper flakes to quinoa pot. Stir.
Sautée spinach.
Add spinach to pot. Stir.
After about 5 minutes, add turkey and avocado and then separate onto plates/bowls.
Eat! 

Unfortunately, my photography for this meal is sub-par. Nonetheless, enjoy!
